Crepes are Yummy!

My family loves these—and they have international appeal!

Here's how to make them:

*1 cup all-purpose flour
*2 eggs
*1/2 cup milk
*1/2 cup water
*1/4 teaspoon salt
*2 tablespoons butter, melted

Let the crepes sit while you prepare this yummy filling:

*two packages cream-cheese flavored instant pudding
*One can sweetened condensed milk
*One tub whipped topping

Mix all and refrigerate. While that's refrigerating, prepare the fruit. Options our family enjoys:

*bananas
*strawberries
*mandarin oranges
*blueberries
*raspberries
*blackberries
*pomegranate
*mango

Cook the crepes by heating a 9-inch (or small) frying pan. Spray with cooking spray lightly as needed. Pour in just enough of the crepe batter to coat the bottom of the pan, tilting to make a circle. When the batter turns opaque, flip. My youngest son encouraged me to flip without a spatula by tossing the crepe in the air. With some practice, I got it and now we have a great time watching me get them just right.

Place everything on the table and let the family build their own crepes, spreading the filling and topping with fruit. Roll ends over (like an untucked burrito) and have a blast! Play with the recipe too, if you like, using different flavored fillings (we also like banana and coconut) and your favorite fruits or chocolate!

Warmly,
Jenny :)
